Best drinking period: within three years after bottling
Vinification: selection of the best must (60 % of the
total must), fermentation at controlled temperature of 17-18
°C; After fermentation, it rests on the lees for three months
and then it is decanted a part into stainless steel vats and
a part into wooden casks to proceed with malolactic fermentation.
After twelve months of maturation, samples from all the barrels
are tasted in order to create the blending. It is subsequently
decanted and let rest for three more months before bottling.
After six months in the bottle, it is put to market.
Colorr: straw yellow
Nose: pulp of withered apricot, ripe banana, vanilla
and sweet tobacco
Mouth: full and rich, with an excellent balance between
fruit and spices. Serving temperature: 10-15 °C
Matching tips: white meats, ripe cheeses or as a meditation
companion.
