Best drinking period: from 3 to 6 years after the harvest
Vinification: Fermentation for eleven days with manual
stirring and délestage. A part of the new wine is decanted
into stainless steel vats and a part into wooden casks to
proceed with the malolatic fermentation. After
eighteen months of maturation, samples from all the barrels
are tasted in order to create the blending. The new wine is
decanted and let rest for three months before bottling. After
four months of maturing in the bottle, it is finally put to
market.
Colour: ruby red with violet reflections
Nose:
fine and aristocratic with a complex aroma recalling small
fruit, mulberry, raspberry and violet
