Best drinking period: from 3 to 10 years after harvest.
Vinification: 13-day fermentation during which we apply
manual stirring and délestage.Then,
it is decanted: a part goes to stainless steel vats and a
part to wooden casks to proceed with the malolatic fermentation.
After a resting period of eighteen months, samplings from
all the casks are tasted in order to proceed with the blending.
The new wine is decanted again and let rest for six months
before it is bottled. After six more months in the bottle,
it is ready to be put to the market.
