Vinification:late grape picking, selection of best
must (60 % of total must), temperature-controlled fermentation
at 17-18 °C in big wooden casks; repose on the lees for three
months after fermentation. Then, it is decanted; a part goes
to stainless steel vats and a part to wooden casks to proceed
with malolatic fermentation. After twelve months and tastings
of samples from all the casks, the blending takes place and
is followed by decantation. The new wine is then let to rest
for three months and subsequently bottled. It is put on the
market after twelve months in the bottle.
Colour:: intense straw yellow.
Nose:dry and ripe fruit, ranging from almonds and dried
plums to fig and Indian fig ( Opuntia).
Mouth: pleasantly full of flavours such as quince,
chestnut honey and ripe medlar. On a closer approach, an agreeable
acidity completes
the fullness of the flavour.
Serving temperature:
10-15 °C
Matching tips:: ripe goat or sheep cheeses, spicy sweets,
or simply a companion for meditation.
